I soak them overnight and then mix loads of parsley, coriander and coriander and cumin powder + onion and use one of those hand held processors. A little bicarb also makes them more fluffy. They also need to be deep fried. But my falafel were too pureed and I ended up with a huge mess, so I ended by baking them on a cookie sheet. If you've got a food processor it's a doddle.
